Ingredients

1 lb ground beef
1 lb ground pork
1 egg
1 large or 2 small onion
2-3 garlic cloves
5-6 slices of stale white bread
Salt, pepper
Vegetable oil
To this particular recipe I added:
1/2 teaspoon ground coriander,
1/2 teaspoon ground cumin
1/2 teaspoon ground fenugreek
1/4-1/3 cup Seltzer water

    These would be burgers in Russia if, for some reason, they already weren’t named “kotlety” by our great-grandparents. So, ladies and gentlemen, this is the recipe for the famous Russian kotlety or kotletki, how we call them with love. I think this is the most used recipe that we brought with us from former Soviet Union countries. It never fails. They are easy to make, delicious and filling.

    I usually like to combine 1lb ground pork and 11/2 lb ground beef. Pork gives them juiciness and beef gives them a taste. However, you can use any ground meat or combination, such as chicken, turkey, veal, etc.

     

    I have a healthy, lean and gluten-free version of this recipe, where the kotlety are not fried, but baked and I am not using any bread at all. Press on the word ” kotlety” to go to the healthier version of this recipe.

    Soak bread in water for 2-3 minutes, and then squeeze water out. In the meat grinder, grind onion, garlic and squeezed bread. In a bowl combine all these ingredients with ground meat, egg, spices and seltzer and mix with your hands really well.

    The mixture has to be homogenous. Heat a skillet over medium-high heat.

    With your hands dipped in water form oval patties and sauté them on both sides on medium heat until nice golden color, about 5 minutes on each side. Enjoy!
