    Since my son tried Lemon Ricotta Pancakes at The Jefferson Hotel, Washington DC, and fell in love with them, I was looking for a recipe for the easy to make, lemony and fluffy pancakes. Here is my version, hope you love the way my family does! And the smell…!

    Combine all the ingredients in a bowl.

    Heat a skillet or a griddle over medium heat, add some oil and pour about 2 tablespoon batter per pancake in a skillet.

    Cook about 3 min on one side, then flip the pancakes and cook for about 2 more min on another side. Serve with maple syrup is desired. Enjoy!
