Ingredients

5 baby or 1 large Eggplant
2 oz Goat Cheese
10 Cherry Tomatoes
2 cups Mixed Greens
1/4 cup Pine Nuts
1 tbs Raisins or Craisings
1 tbs Chopped Cilantro
Dressing
1 tbs Lemon Juice, freshly sqeezed
1/4 cup Olive Oil
1 Garlic Clove
1 tsp sea salt

Grilled Eggplant with Goat Cheese, Raisins and Pine Nuts

      Directions

      Once I spotted absolutely cute little baby eggplants which looked like purple Easter eggs clinging together under plastic wrap. I couldnt pass them by. I needed them. They needed me. I bought them. they smiled at me. The question was: how to utilize them maintaining that unique cuteness? This salad was the answer I was looking for. It was very fragrant, fresh and tasty. I am making it over and over again and loving it!

      If you absolutely hate cilantro (some people do), you may substitute with mint or basil.

      If using baby eggplants, cut them in half. Cut large eggplant into about 1-inch chunks. Preaheat your grill pan or heavy skillet with some oil. Grill eggplalnt piecdes until dark golden brown.

      Arrange garden greens on a serving plate. Place grilled eggplant on top. Crumble goat cheese on top of hot eggplants.

      Cut cherry tomatoes in half, arrange them on top of salad, sprinkle toasted pine nuts, raisins and chopped cilantro.

      Mix well all ingredients for dressing in a small jar with lid. Shake well and pour over salad.
      Enjoy!
