16 oz unsalted farmer cheese
2 eggs
Pinch of salt
5 tablespoon coconut flour
2 tablespoon flaxseed flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 tablespoon sugar, or 2 tablespoon honey, or 4 tablespoon maple syrup

Flourless Cheese Scones

      This recipe is based on a traditional Russian recipe for cheese scones called “syrniki” because “syr” is “cheese” in Russian. They are usually fried on the skilled and very delicious, and loved by kids and adults as well.

      Since I am on the venture to find a healthier or alternative way of cooking using less gluten products and sugar, I developed this recipe and it came out very good. I like these scones even better, and so does my son! This is all that matters! He eats them in a healthier way and I am happier.

      You will need silicone muffin pan or silicone muffin cups for this recipe. This recipe will give 6-7 scones. If you need more, double everything up, just use 5 tablespoon coconut flour instead of 6.



      Preheat oven to 350 F.
      In a bowl combine cheese, honey or maple syrup and eggs, mix thoroughly.


      Combine dry ingredients in another bowl. If using sugar, add it to this mixture. Combine cheese and flour mixtures and mix them thoroughly. Form balls about 1½ inch size,roll them in coconut flour and flatten with your hands forming patties.


      Sprinkle the bottom of the silicone cups with some flaxseed flour. Transfer patties in each cup and bake for about 20-25 minutes, until golden crust forms on the top of the scones.


      You can make them decadent inserting a small piece of chocolate, a raspberry, or a canned cherry into each patty before baking. Enjoy!
