4 tablespoon Hazelnut flour can be substituted with Almond flour
1 tablespoon Flaxseed flour optional
2 Eggs
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
2 tablespoon Sugar
pinch Sea salt

      Since I am on the venture to find a healthier or alternative way of cooking, using fewer gluten products and sugar, I developed this recipe and it came out very good. Healthy, easy to make and delicious, these cheese scones may have different variations.  You can make them with fresh or dry fruits or berries, chocolate chips, candied citrus rind, nuts, grated apples or homemade chunky applesauce, and so on. I suggest using silicon muffin pans or cups, them you can easily remove scones from the baking dish. Or, use your regular muffin pan with muffin paper cups.



      Preheat oven to 400 °F.


      In a bowl, combine cheese, eggs, salt and sugar and mix well. Add flour and the rest of the dry ingredients. Mix thoroughly. Add raisins, cranberries, berries or other flavorings you are using and mix well.


      Fill your baking muffin pan or cups with batter up to the top and bake for about 30 minutes or until a testing wooden skewer comes out clean and dry, You may remove your cheese scones from the muffin pans and serve them with sour cream or yogurt for the healthier version. Enjoy!
