      Delicious and frangrant, this soup is so comforting on the cool Autumn day! Brings you the  memories of a forest, even so its color reminds me a cup of cappuccino.  Thus came an idea to serve it in my husband’s cappuccino cup! Enjoy!

      Place dry mushrooms in a bowl, add about 1 cup boiling water, cover and let stand for about 1 hour for mushrooms to reconstitute. Strain using cheesecloth or simply few layers of paper towels. DO NOT DISCARD STRAINED LIQUID!
      Brush and clean with a wet towel all fresh mushrooms.

      Cook vegetable broth. Combine all vegetables except mushrooms in a saucepan, add strained mushroom liquid and water, about 6 quarts altogether. Bring to a boil over high heat. Add salt and ground pepper. Reduce the heat and simmer for about 20 minutes.

      Preheat the large skillet on medium-high heat. Roughly chop all mushrooms, except exotic mix and saute them in batches in a skillet until they are golden. Do not saute reconstituted porcini. Sprinkle with salt, ground black pepper and ground nutmeg.

      *Remove vegetables from the bouillon and add sauteed mushrooms and reconstituted dry porcini to the pot. Cook for about 15-20 minutes.

      Working in batches, puree cooked mushrooms with some liquid and a goat cheese in the blender or food processor. Return soup to the pot and warm through. Add enough mushroom broth to thin soup, if necessary.

      Fry exotic mushrooms mix with avocado or olive oil until crisp and golden. Use them for decoration, sprinkling on top of your soup. Sprinkle with chives, if prefer. Enjoy!

      *You can pure cooked root vegetables with mushrooms, but I was looking for a clean mushrooms taste.
