Ingredients

3 lb chicken, cut-up or chicken quarters
1 large onion, diced
2 carrots, thinly sliced
1 cup pitted prunes
½ cup dried apricots, cut in halves
2 tablespoons chopped parsley
1 cup apples juice
2 tablespoons lemon juice
3 garlic cloves, chopped
2-3 cups chicken broth
Salt, pepper

Chicken Braised with Dry Fruits

      Heat the oil in a Dutch oven. Cook the onion until lightly golden color. Remove onion from the Dutch oven. Cook carrots until they start to caramelize.

      Remove carrots from the Dutch oven and put them on a plate. Cook chicken in oil until all sides are golden brown. Drain fat leaving about 2 tablespoons in the Dutch oven. Add dry fruits, carrots, and onion, to the chicken in the Dutch oven.

      Pour juices and chicken broth over chicken making sure liquid just covers chicken pieces. Heat to boiling, reduce heat.

      Cover and simmer for about 30 minutes. Add salt to taste, garlic and parsley and cook additional 15 min or until juices from the chicken run clear. Enjoy!
