Ingredients

For the Crust
1½ cups Vanilla wafer cookies takes about 44 cookies or have of package
2 tablespoon Sugar
2 tablespoon Unsalted butter melted
1 tablespoon Water
For the Filling
2 packages (8 ounces each) Light cream cheese softened
1/2 cup + 1/4 cup Sugar
2 Egg whites
1 teaspoon Vanilla extract
3 Golden Delicious apples peeled, cored and sliced very thin, about 1/8 inches
1/2 teaspoon Ground cinnamon
1/2 cup Orange marmalade melted and strained

    Directions

    Cheese cake lovers and apple pie lovers will be equally satisfied with this easy to make, and absolutely delicious pie. I love this pie with vanilla ice cream and without, and I don’t need an occasion, like Thanksgiving, to make this apple pie.

    Preheat oven to 375F. Spray a 10-inch spring form with vegetable cooking spray.

    In a bowl, combine wafer crumbs, sugar, melted butter and water. Mix thoroughly. Press mixture into the bottom and up the sides or the prepared pan. Bake crust for about 12-15 minutes, or until golden. Transfer pan to a wire rack and cool.

    Meanwhile, beat with electric mixer on a medium speed cream cheese, ½ cup sugar, egg whites and vanilla until light and fluffy. Pour mixture into the crust and smooth out with a spatula.

    Starting from the outer edge of pan and working in, arrange apple slices lengthwise, in concentric circles, until reaching center.

    In a small bowl, combine ¼ cup of sugar and cinnamon, sprinkle on apples. Bake for 1 hour. Transfer pan to a wire rack.

    Melt and strain orange marmalade, and while the pie is still hot, brush marmalade over the top of the apples. It would give the pie shiny, “store-bought” appearance and melt any sugar, remaining on apples’ surface.
