Baking this pie is simply therapeutic – it fills your house with the smell of cinnamon and apples, and gives you a sense of comfort and warmth. I hope you enjoy it as we do!

Preheat oven to 375 degree F. Grease 9 x 11 inches baking dish with butter. |

Beat eggs and oil slightly and add to sugar mixture. |

Combine dry ingredients and add them to apple mixture. Mix well. Stir in any dry fruits, nuts and chocolate chips, if using. |

Pour mixture into creased baking dish. Bake for 35-40 minutes and test with the toothpick – it has to come out clean and dry. *To make it more festive and decadent, add ½ cup raisins, ½ cup dry cranberries, 1/2 cup roughly chopped pecans and 1/3 cup semi-sweet chocolate chips. You can add or combine any nuts, dry fruits or berries you like, for example, dry cherries, or dry currants, etc. |
