I was hesitating posting this recipe because everyone roasts potatoes. But now, with Thanksgiving only 2 days away, I decided to go for it. Easy and delicious, one of my favorites and I make them all the time.

5 sweet potatoes
4 baking potatoes
¼ cup vegetable oil
Salt, pepper
1/3 teaspoon freshly grated nutmeg
1/2 teaspoon garlic powder
1 tablespoon dry chives
Heat oven to 400F. Peel and quarter potatoes and place them in a glass or ceramic baking dish. (You can use any baking dish, of course, but I just like to serve them in the dish they were baking). Add oil and seasoning and chives. Mix with spatula and roast for about 45-60 minutes until potatoes are crispy on the outside and soft on the inside. You can check doneness with a tip of your knife or, my favorite way, cut off a piece and bite it! Can’t go wrong! Enjoy!
